Structure of inulin
Inulin isolated it as a carbohydrate substance from the roots of Elecampane(Inula Helenium) in the early 1800s first by a German scientist. Inulin consists of linear chains of fructose molecules linked by b-2,1-bonds and terminated with a glucose as in sucrose. Inulin is representative example of a dietary fiber and accepted as ‘dietary fiber’ in many countries. That is, inulin is the family of carbohydrates that resist to hydrolysis by human enzymes, and is fermented by colonic microflora.
